11/14/1999 Archived Entry: "Knife Skills by Norman Weinstein"
Good knives and good knife skills can change your cooking life. You’ll be able to do everything faster, neater, better. Women are afraid of knives, men less so, but everyone could benefit from a knife skills class. I sat in on Norman Weinstein’s basics class last year and it improved my performance. Norman, who is also known as New York’s premiere Chinese cooking teacher, still has some open knife classes this year.
Here’s his schedule. If you want to give a knife skills class as a Chanukah or Christmas present, call the following schools and arrange a date when Norman will be teaching after the first of the year. Knife Skills I; The Basics: December 1, 3, and 14, at Peter Kump Cooking School, 6 p.m. Knife Skills I, The Basics:December 7, at Cooktique, Tenafly, N.J., 7 p.m. Knife Skills I, The Basics: December 11, at Classic Thyme, Westfield, N.J., 10 a.m. Knife Skills II (Boning, carving, filleting, etc.) November 17, at Classic Thyme, Westfield, N.J., 7 p.m. Knife Skills III, The Art of Garnishing: December 2, at Peter Kump Cooking School, 6 p.m. Cooktique: 9 West Railroad Ave., Tenafly NJ 07670; (201) 568-7990 Peter Kump: 50 West 23rd Street; New York NY 10010; (212) 847-0700; (800) 522-4610 Classic Thyme: 161 East Broad St., Westfield NJ 07090; (908) 232-5445
