11/22/2001 Archived Entry: "Thanksgiving Recipes (Including Leftovers)"

There are many recipes on The Food Maven website that may be useful for Thanksgiving and for the next few days.

For instance, if it isn’t too late for this advice, A Turkey Tip is a riff on roasting the bird breast-side down for a majority of the cooking time.

For lovers of leftovers who want to go beyond sandwiches (I love mine on white bread or a Kaiser roll with horseradish and mayonnaise), check out the late, great Bert Greene’s recipe for Turkey Tetrazzini, and the easy, barbecue-flavored Turkey Hash that my radio wife, Joan Hamburg, loves so much.

Speaking of Joan, her now-famous Ritz Cracker Stuffing is here, too, outlined more precisely than Joan does on the air. (“Is it really good?” I get asked all the time. All I can say is that I made it once and my family has not requested I make it again. Then again, it is not our family tradition, as it is Joan’s. In its favor, I have to add that it is mighty rich and indulgent – as Thanksgiving food ought to be. And who doesn’t love Ritz crackers?)
