06/24/2004 Archived Entry: "Teriyaki Meatloaf"

I originally got this recipe from kikkoman, the Asian food company best known for its soy and teriyaki sauces.

Then my sponsor Uncle Jack’s Steakhouse, of Bayside, and now also of Ninth Avenue in Manhattan sent me a plethora of their new sauces. So I tried this intriguing recipe with their “Sesame-Soy Teriyaki Marinade” and it turned out great. It’s not too sweet for my taste. There’s just a hint of something different.


Surprise Meatloaf
Makes 6 servings

3 pounds ground chuck
2 cups soft bread crumbs (about 5 slices)
2 medium onions, minced
1 carrot, shredded (about ¾ cup)
½ cup plus 1 tablespoon teriyaki marinade & sauce
2 eggs
2 large cloves garlic, minced
1 tablespoon minced fresh ginger root

Thoroughly mix together beef, bread crumbs, onion, carrot, teriyaki sauce, egg, garlic, and ginger.

Pat into a free form loaf and place 7 wide by 12 long by 2 high in an ungreased roasting pan.

Bake at 350 degrees for 90 minutes, or until meat thermometer inserted in center registers 160 degrees. Pour off drippings, let stand 10 minutes before removing from the pan and serving.
