Cook At Seliano Update!
The Cook At Seliano class/tour scheduled for the last week in August is almost full. There are still, but just, a few places left. [more]

Spaghetti alla Carbonara
As I was preparing for the WOR trip to Rome, gathering a few recipes to hand out for dishes that we would be eating while there, I realized that there was no recipe for Spaghetti all Carbonara, one of my absolute favorite pastas. What an omission! [more]

Jewish Meatballs
Why does almost all Jewish food taste better when made the day before it is eaten, I asked Mitchell Davis, author of The Mensch Chef. (Get it? The French Chef. The Mensch Chef.) He shrugged his shoulders, which really doesn’t work as comment on the radio. [more]

Cook At Seliano
Dear Friends,

After so many requests for me to take a small group to Italy – apart from WOR cruises – I have come up with the following plan for cooking, eating, and touring in Naples, Salerno, and at the agriturismo of my dear friend Baronessa Cecilia Bellelli Baratta. [more]

Wine Buy: Bonny Doon Vin Gris
Food Talk sommelier Carol Berman writes:

"Wildman" Steve Brill
You may remember, a few weeks ago I had “Wildman Steve Brill” as a guest on “Food Talk.” He is the very passionate ecologist who forages local parks and lakes for natural foods that can be made into dinner. He is the author of Identifying and Harvesting Edible and Medicinal Plants in Wild (And Not So Wild Places) and The Wild Vegetarian Cookbook -- two books on the subject. [more]

Wine Buy: Apremont 2001
Pierre Boniface’s Apremont 2001 is a delicious wine made from the Jacquere grape that will no doubt be at the top of my summer sippers list. Jacquere grapes are only grown in the Savoie region of eastern France. It’s an area that historically encompassed parts of both Italy and Switzerland -- Alpine country. [more]

Sean's Fondue Addiction
Sean Brady, my assistant, wrote the following entry, motivated by our purchase of a package of pre-made vacuum-packaged Swiss fondue.

Pressure Cooker Risotto
Recently, at a remote broadcast of “Food Talk,” an audience member asked me why her risotto never came out right. I would have to stand next to her while she’s cooking to adequately answer that. There are several things that can go wrong, and many people do have difficulty making good risotto because risotto is all about technique. It is a humble Italian rice dish, made all over Italy nowadays, but originally from the Po Valley near Venice and not far from Bologna. Driving the Adriatic coast road from Ravena to Venice last year, I passed through the rice patties for the first time. [more]
