You might well call this the Le Bernardin of Rome. It serves
unimpeachably fresh fish, much of it in innovative dishes, and the prices
are sky high. If the restaurant is not too rich for your blood, stick to
the traditional offerings. You’ll see many of the impossibly chic
Romans here ordering Nobu-like raw fish dishes, but they pale in comparison
to the real thing, or the Japanese originals they are modeled after. Innovations
based on old Italian tradition, like pasta with shrimp and pecorino Romano,
are much better. (Seafood and cheese together, after generations of not
being combined, is a current fashion in the south of Italy.) Classic fish
soup, grilled fish, etc., are what you really want here. The dining rooms
are small, white, gorgeously appointed and fabulously well-served. Very
expensive.
